Food on Cycling Saturday- 22 miles!


Per weekend tradition, Bobby made a breakfast bread from scratch- this morning was biscuits. Two w/ no sugar/salt fresh ground almond butter, drizzle of honey (still working on the old jar), granny smith apple. I ended up sharing the apple with Bobby, since he *did* make the biscuits.



Then we went out cycling around town, to check out the three awesome trails, and figure out a way to get downtown without running out of bike lanes. All told, we did 22 miles. About halfway through, we stopped for lunch at Tasty Harmony- home of the epic nachos. We shared a smoothie and a cup of chilled tomato avocado soup. We also split the taco plate- one taco each, black beans, rice. Honestly, even if I had remembered my camera I would have been too hungry to take a pic before digging in :) When we got home I ate peanuts and raisins, as well as a piece of toast not pictured.



Dinner was leftovers for the entree- the pasta bake topped with breadcrumbs from the other night, but I scraped off the breadcrumbs. Not in the mood :) Asparagus sauteed in lime juice and fresh garlic; and a sauteed salad of sweet potato and fresh garlic with our CSA buddies swiss chard and radish, seasoned with cumin, salt, pepper.

Breakfast and Lunch



I only purchased the O.J. because guests were in town, and Bobby and I either drink water or all natural sodas on the weekends for a treat, and I wanted to have something in the fridge. I finished off about a half a cup of it, and I will never buy O.J. again. This container cannot be recycled. Ever. Think of that the next time you're in the grocery store- the soy milk, the regular milk, the juices... all waxed up and here for pretty much forever. Crazy.



16 oz Pineapple Paradise smoothie. Also a piece of sprouted whole wheat toast with no sugar/no salt fresh ground almond butter not pictured. Also something that can't be recycled, they wouldn't let me use the container I brought for "health reasons". And then when they handed me this styrofoam guy... awesome.



Leftovers! Even better the next day- and strangely more attractive. Maybe it's the bowl?

Dinner was eaten out, camera forgotten. A sandwich of two small grilled 'bella caps, a roasted red pepper, pesto, tomato, red onion, lettuce. Declined the fries and upgraded to a side salad of sprouts, pepitas, chickpeas, onions, cucumbers, tomatoes, and roasted red pepper hummus to top it off.

Thursday Dinner- Delicious but Ugly



This casserole might not look pretty, but it took a lot of work and it was amazing. I made tofu ricotta- tofu, raw cashews, fresh basil from my herb garden, lemon juice, salt and pepper- and then I made bread crumbs from whole wheat french bread- tore it into pieces, let it get stale overnight, then pan fried it in a bit of vegan butter with dried rubbed sage, oregano, paprika, salt and pepper. The filling is roasted eggplant with sauteed mushrooms, bellpeppers, onions, fresh garlic, mixed together with the tofu ricotta and whole wheat shells. So good. The salad is chopped lettuce and radishes from our CSA share, plus mango, yellow bell pepper, red bell pepper, tomato, and red onion.

Food Humor, in "Honor" of B.P.


This was dessert from Tuesday night- agave sweetened vanilla ice cream made from coconut milk, wrapped in chocolate and coconut. It represented the oil spill perfectly in the world map above our dining room table. Thanks for contributing to the efforts to destroy the only world we have BP! No wonder I'm drowning my sorrows in ice cream...

Thursday food- Getting over the cold!



Breakfast- banana and Emergen-C



Lunch- Leftovers from last night- half a cup of five alarm five bean veg chili, salad from Mad Greenz- pickled beets, croutons, pumpkin seeds, mixed greens, sherry molasses vinaigrette. Two slices of bread with roasted garlic- this was the first meal in a day I could really taste, huzzah!

Wednesday Food- Terrible Cold Edition



I skipped breakfast after getting no sleep, but I did down another Emergen-C. I made myself eat this lunch- whole wheat pasta, pasta sauce out of a jar - far too sick to cook anything special!- and two pieces of bread topped with the garlic I roasted over the weekend, fresh ground black pepper, drizzle of olive oil. More roasted garlic on top of the pasta. I was all stopped up and desperately wanted to be able to taste something!

We picked up soup and salad for dinner, and I was far too sick to take a picture. I ate half last night, and half today for lunch.

Tuesday Night Dinner



Flax flat bread topped with vegetarian refried beans, roasted red, yellow, and green bell peppers, baby bellas sauteed in olive oil w/ fresh garlic. Baked in the oven for 15 minutes, then topped with mango tomato salsa, chipotle salsa, red onions, and vegan sour cream. Side of half an avocado, portion of rice topped with mango tomato salsa/chipotle salsa.
