I Fell in Love with a Sandwich Tonight



I had a salad for lunch that I forgot to photograph, blah blah blah, MORE IMPORTANTLY, this sandwich was amazing. Let's get the sides out of the way. Bottom right- I roasted beets from our CSA in olive oil and rosemary. Bottom left- I'm trying to eat a portion of raw veggies every night salad style, so this was broccoli, red peppers, walnuts, and chia seeds tossed in rosemary vinaigrette. Onto the main event- a sandwich on rosemary bread (the kind you take and bake at home) with an apple sage Field Roast sausage(wheat meat, so much better than soy), topped with a mixture of baby bellas and radishes sauteed in olive oil, fresh garlic seasoned with sage, paprika, salt and pepper, tomato, and lettuce. I made a roasted garlic and red pepper mayonnaise to go with- 3 cloves of fresh roasted garlic and a handful of red peppers food processed with vegan mayo, pepper, and salt.

Bobby and I said nary a word until both of us had polished off the sandwiches. For something I just threw together with stuff from our CSA that needed to get used up this was fabulous.

Mmm, cereal



Breakfast before yoga- half a cup unsweetened shredded wheat squares, unsweetened coconut milk, big handful of blueberries, half a banana, topped with cinnamon, a good sprinkle of chia seeds, unsweetened/unsalted trail mix of walnuts, almonds, cashews,peanuts, sunflower seeds, dates, coconut slices, and about a tsp of agave. I can't remember the last time I had cold cereal for breakfast, this was really good. Hot, plain decaf green tea. As a side note- doing an hour of vinyasa flow/power yoga until 8:30 last night, and then getting up and doing it again at 10 a.m. this morning, was very. very. hard. But worth it :)

Lunch, Dinner, snacks



Lunch- lentil soup leftovers. Lentils, squash, onions, tomatoes, potatoes, organic/local rainbow swiss chard. Topped with garlic wheat croutons, but then took off half because the crunchy texture was weird with the soup.



I had a late lunch, and then hit up some chips and guacamole, pita and hummus, and veggie sticks at Whole Foods, so before yoga I just had a banana with a tbsp of almond butter, and after yoga I ate this whole wheat almond butter and no sugar added raspberry pomegranate jelly sandwich.

Christmas Smoothie in July



Smoothie- one banana, handful of frozen strawberries, cup of raw organic rainbow swiss chard, splash of unsweetened coconut milk. This made two servings, one for Bobby and one for me. I liked how it looked like Christmas candy, with the green flecks in the pinkish red :)



Steel cut oats, soaked overnight and cooked with water, added cinnamon and the slightest bit of agave- I usually don't sweeten my oats at all, but I was out of almond butter. A trip to the store later today is in order. Topped the oats with unsweetened/raw/unsalted trail mix of peanuts, cashews, almonds, walnuts, sunflower seeds, raisins, dates, coconut slices. I also mixed in some of my smoothie halfway through.

Thrift Store Mug Life Wisdom, or, Bobby Makes Good Hot Cocoa



While I was working on a project for my internship Bobby made me some hot cocoa. Simple ingredients- unsweetened coconut milk, unsweetened cocoa powder, about a tsp of honey (that jar is never going to be empty, I swear it's replenishing itself).

But the best part is the ridiculous mug we purchased from the thrift store yesterday... with such an uplifting message, why would anyone ever give this treasure away?!

Dinner- Still craving Indian food I Guess!



Lentil soup from scratch (an old standby)- brown lentils, tomatoes, onions, fresh garlic, red potatoes, squash, organic/local rainbow swiss chard, seasoned with garam masala, turmeric, cumin, cayenne, salt.



Coconut curry- broccoli, zucchini, carrots, red peppers simmered in a variety of spices- can't remember all of them, haha. I took about 1/3 of it and food processed it with coconut milk to make it creamy. Topped with raw cashews, peanuts, sunflower seeds, coconut slices, dates. Tofu- marinated 24 hours, then sprinkled with garam masala/olive oil and baked. Loved this! Leftover garlic naan from eating out last night. Biryani rice- from a package, and my least favorite. Too salty and the spices didn't taste fresh, I only ate about half. I polished off all the rest though :)

Snack-y Day



After we walked the dogs we hit up the farmers' market. I taste tested a piece of pumpkin bread, a little chunk of lemon sage bread, a tortilla chip with salsa, a cracker with mango jalapeno salsa, and a pickled beet *love pickled beets!*. We picked up a jar of the beets and a bag of 4 pineapple empanadas. I had a black bean patty when we got home, and then Bobby and I split an empanada- he's on the left, I'm on the right :)



Half a banana to get me through cooking dinner after the light snacky lunch I had.
