Tuesday- The I Have a Cold Edition



Breakfast- I don't usually have an appetite in the morning anyway (I make myself eat something because it's good for me, and I have more energy, but it's a chore) but I have even less of an appetite when I have a cold. Yesterday I made raspberry cornmeal muffins from scratch (organic black/blue/raspberries were on sale about two weeks ago for $1 a pack, so we stocked up and froze them) so this morning all I could get down was one muffin and a small spoonful of almond butter. That was washed down with water and then a dose of Emergen-C. A nap followed shortly after.



Lunch- Bobby and I rarely eat out, and if we do it's almost always dinner, usually on the weekends, so not having to make lunch was a nice treat. Tomato basil soup; sundried tomato and pesto on focaccia. Note the 7-Up. I wanted something fizzy that would settle my stomach. I took two drinks. It's gross, and tastes like everything fake in the food world. I had water instead, better for me anyway. Another nap. Still not feeling too hot, but I'm determined to make a proper dinner.

Monday's Food

I slept in and lazed around for a bit, eating a blueberry muffin for breakfast, and forgot to take a picture of it- but, there were two pics of the muffins the day I made them, so that makes up for it :)



Lunch- leftover marinara sauce, with leftover bits of fresh zucchini, red pepper, squash, and mushroom thrown in, over about 1/2 a cup of whole wheat shells- I like about 2X as much sauce as pasta. Two pieces of bread smeared with garlic cloves I roasted the night before- nope, not butter, those yellow-ish bits are totally huge smeared chunks of garlic :)




Because breakfast was super light, and I had an early lunch, I had a snack. I'm not normally a very snacky person, but the crumble was calling my name. Just enough in a little tea cup for a few bites, and about 6 oz of chai tea latte (made with unsweetened coconut milk. It's like drinking straight cream. It's awesome).




So, here's where I start getting my cold. Dinner was light- half of a huge orange and the standard almond butter/blackberry jam on whole wheat- because Monday is the hardest yoga class I've ever taken in my life, and if I eat too much I feel like I'm going to puke. Anyone who says yoga isn't a workout has clearly not done Kimberly's power vinyasa flow, that's all I'm saying. Anyway, after dinner, I started feeling really crappy, and sneezing, and just TIRED. So, I neti-potted my nose, washed my face, and jumped in to bed. For a four hour "nap". No yoga for this guy!

Dessert in Bed Sunday Night


Bobby loves to make this crumble. I made it the first two times, and he's done it ever since. Sunday night I got all ready for bed, washed my face, and put on my jammies. I ate a few little spoonfuls in a baby tea mug in bed, brushed my teeth, and went straight to sleep. Sweet dreams!

"Burgers" for Lunch and Gnocchi for Dinner



Lunch- When I eat a veggie burger, I try to look at it as a salad that happens to be sharing a bun with a burger :) This guy had vegan mayo, horseradish mustard, red onions, roma tomatoes, pickles, and radishes and red leaf lettuce from our CSA. Garlic fries on the side, ate about 2/3 dipped in more horseradish mustard. Half a can of Raspberry no caff/pres/art. flavors/HFCS soda.



Dinner- gnocchi (italian potato dumplings, first time having them, not a fan) covered in tomato basil marinara with fresh picked basil, garlic, red onions, topped with roasted veggies: zucchini, squash, red onion, baby bella mushrooms, and red pepper roasted with leftover pesto sauce and fresh picked rosemary. Focaccia bread drizzled w/ olive oil, a salad to use up the rest of the lettuce/radishes/red pepper. I ate all the salad but could only finish half of the pasta and one piece of bread.

Breakfast- Muffins



Organic blueberries and bananas were on sale, so I tried out a blueberry banana muffin recipe. It made twelve muffins, plus enough batter left over for a short loaf of bread. The recipe only called for 1/2 a cup of sugar, so these were actually pretty healthy. On the side are chopped white peaches, regular peaches, and apples mixed into unsweetened coconut kefir and sprinkled with cinnamon. Decaf blueberry green tea to drink.

Breakfast, Lunch, Dinner



Leftover tofu scramble, soy sausage, made from scratch banana waffles, unsweetened coconut milk kefir, water




Almond butter no sugar/salt, fresh ground and blackberry jam no sugar added on whole wheat bread, banana. I ended up not drinking the soda to save it for dessert after dinner. Had a chai tea latte with coconut milk instead.




Salad with red leaf lettuce and radishes from our CSA (local and organic)as well as red onion and zucchini, tossed with rosemary vinaigrette, croutons. Pizza made on flax bread flat bread, with pesto, tomato basil tomato sauce, baby bella mushrooms, zucchini, red onions, fresh minced garlic, roma tomatoes, red onions, vegan mozzarella (Vegan Gourmet, it's so. good). Had the soda I saved from lunch for dessert- vanilla cola, no caffeine/artificial flavors/preservatives/HFCS.

Breakfast for Dinner



Biscuits from scratch, vegan soy sausage. Tofu scramble- tofu scrambled with spices, white onion, fresh spinach (our first pickup from the CSA!) fresh roma tomatoes, a bit of Frank's Red Hot. Orange juice.

Random assortment- guests came in and I got distracted :)



Leftovers- falafel, couscous, yogurt sauce, roasted red peppers and sweet potatoes, some pita chips



Fresh ground no salt/sugar almond butter and blackberry no sugar added jam on whole grain toast w/ white peaches and apricots. Unsweetened coconut milk kefir, water

Breakfast: Waffles from Scratch



Bobby and I made cinnamon vanilla raspberry waffles. Always from scratch, always with my Great Grandmother's waffle iron from the 1950's :) Topped with honey (still working on a HUGE jar of avocado honey I purchased in San Fran last year)and almond butter no sugar/no salt. Decaf blueberry green tea, unsweetened.

Dinner and Dessert



Falafel (I baked them, they're usually fried) on naan with artichoke garlic hummus, tomatoes, onion, lettuce, and a yogurt sauce made with unsweetened coconut milk kefir, fresh minced garlic, cucumber, white pepper, and dill. Squash pan fried in olive oil with fresh garlic. Lemon spinach couscous (from a box).

Organic raspberries and blackberries were on sale for a $1 a pack, so we stocked up and Bobby made his signature crumble with some of them. A portion with coconut milk vanilla ice cream.

Breakfast and Lunch



Almond butter (fresh ground no sugar/salt) and no sugar added all fruit blackberry jam on 6 grain no sugar added whole grain bread. One apple, unsweetened coconut milk kefir, water.



Drink with lunch- raspberry ginger ale, organic, no preservatives/caffeine/artificial flavors, 20% juice



Best thing I ate all day :) Bobby and I split this and still had half left over. Nachos with black beans, cashew cheese, vegan sour cream, onions, pico de gallo, guacamole, and fajita spiced jackfruit- it's a fruit that shreds exactly like carnita style meat, and, like tofu, absorbs whatever flavors you put on it.



Raw coconut cream pie for dessert with raw chocolate sauce. This was a pretty small slice, Bobby and I shared it and I ate about 1/3.

Dinner and Dessert



Black beans with onions, jalapeno, garlic, and corn, spiced with cumin; roasted sweet potatoes and red bell peppers with olive oil, salt/pepper; avocado, mango, tomato salsa with lime.

Dessert was 1/3 a can of natural vanilla cola- no soda will ever be "healthy", but this has no caffeine/artificial flavors/preservatives/HFCS. It's made with pure cane sugar instead, which is why it is, most certainly, dessert :)

Dinner and Dessert



Cornmeal crusted tofu- Cajun style "breading" spiced with lime zest, cumin, cayenne, chili powder, salt, then baked. The colorful guy is corn pudding- red bell pepper, jalapenos, fresh cilantro and scallions, bake to reach firm bread pudding consistency. Both of these recipes are from the cookbook "Veganomicon".Served with green beans plain save pepper.




Chai tea mixed with unsweetened plain almond milk, and a small square of my favorite chocolate- dark, spiced with cinnamon, cayenne, and chili.

Lunch: Moroccan Braised Chickpeas, Naan, Red Pepper Hummus


This is probably one of my favorite recipes to make. It has chickpeas, garlic, onions, dried apricots, raisins, and parsley and is spiced with ground coriander, cumin, cinnamon, turmeric, and cayenne pepper. A little crumbled soy sausage and a side of naan and hummus rounds it out.
