Lunch, Dinner, Dessert- Black Bean Banana Brownies



Lunch- leftover black bean patty topped with cashew and avocado cheese sauce, red onion, tomato. Potato, rosemary, roasted garlic soup. Dinner was falafel on pita with tomatoes. Totally forgot the picture.



I found this recipe for black bean, vegan brownies on the Happy Herbivore. It uses agave syrup instead of sugar, no flour- oats stand in for this- and includes two cups of black beans and two bananas. And it was awesome. One brownie is 85 calories, 1 gram of fat, and 4 grams of protein. I topped it with about two tbsp of a random sauce I made in the food processor- half an avocado for creamy texture, a handful of raw unsalted cashews, strawberries, blueberries, and a sprinkle of raisins. Heated it up a bit on the stove top, added a sprinkle of cinnamon, and glopped it on top. The leftover fruit sauce is definitely topping some pancakes tomorrow :)
